Spicy Chili Daddy #christmas #dinner

I've shared some of my dad's recipes on our blog before his cinnamon rolls and frozen cookies are two of my all-time favorite recipes. My father can also mean a chili pan. When we went to Illinois, my father taught Josh how to make his chili famous. Josh likes it and so does my whole family. My father's chili is warm, spicy, and full of meat. My father called it "all meat, all the time" chili. Be a meat lover, get your chili bowl ready, you will love my dad's spicy chili.



My father has made his chili famous for as long as I can remember. When we have gotten together in the winter, my dad's chili is often on the menu. Everyone wants "Parry's chili." He usually makes with Italian sausages half and half meat hamburgers, but because Josh is not a fan of hamburgers, he used Italian sausages. All this time. My father said he was fine. JalapeƱos gives a good chili kick. If you are not a spicy fan, you can leave jalapeƱos out, but my dad likes spicy chili.
INGREDIENTS:

  • 1 1/2 bags (24 ounces) of dried small red beans
  • 2 lbs. Italian sausage (or 1 lb. Italian sausage and 1 lb. ground hamburger)
  • 1 large onion, diced
  • 6 bay leaves
  • 1 teaspoon of salt
  • 2 (28 oz) cans of diced tomatoes
  • 1 (16 oz) can be tomato sauce
  • 1 (6 oz) can be tomato paste
  • 3 tablespoons of chili powder
  • 3 tablespoons of cumin powder
  • 1 tablespoon of sugar
  • 1 teaspoon of black pepper
  • 1 teaspoon of red pepper is crushed
  • 1/3 cup of tamed jalapeno slices, dried (they are in a jar)

DIRECTION:

  1. Soak the beans in a large pan overnight. When ready to cook chilies, add diced onions, bay leaves and salt to peanuts and bring to a boil until the beans are soft. Deplete excess water to the same level of water and beans.
  2. Brown meat in a large skillet. In a separate large pan, make a sauce. Add tomatoes, tomato sauce, tomato paste, chili powder, cumin, sugar, pepper, red peppers and jalapenos. Bring to a boil for 15 minutes.
  3. Add the sauce and meat to the pan and boil for 30 minutes. Serve warm chili.
  4. Note - You can adjust seasonings with your likings. My father likes spicy! Also feel free to add your favorite chili topping-cheese, crackers, green onions, sour cream, or butter-like my dad :) It's also good with cornbread.
