Slow Cooker Pork Carnitas Recipe

Hi. I am Isabel and I have a love-hate relationship with my slow cooker. Like many things in life, slow cookers have pros and cons. Pro-can make even the toughest cuts of tender and flavorful meat. Con-requires time and patience.

Because it is slow to cook (after all, it is a slow cooker), requires a lot of recipes to cook for a total of about 8 hours. Of course, it's really OK if you remember to plan ahead, but I know many people, including myself, just forget enough. What if I tell you that I have a recipe for Mexican Slow Cooker pork Carnitas taco that takes about half normal when cooking other recipes isn't as delicious?

For carnitas pork

  • 2 1/2 pounds of pork shoulder (also known as 'pork butt')
  • 1 tablespoon of lime juice
  • 2 teaspoons of rough sea salt
  • 2 teaspoons of cumin powder
  • 1 teaspoon of chili powder
  • 1 teaspoon of powdered garlic
  • 1 teaspoon of oregano
  • 1 teaspoon of onion powder
  • 1/2 tsp black pepper

Tacos and toppings

  • corn tortilla
  • cilantro, diced onion, lime, avocado


  1. Cut the pork shoulder into large 4-inch pieces, removing any excess fat. Place them in a slow cooker.
  2. Add all the other ingredients to the slow cooker and stir thoroughly to coat the meat with all the herbs and spices.
  3. Cover and cook high for 4 hours. When it's soft, it breaks the meat by pulling it apart with a fork.
  4. Serve pork carnitas warm corn tortillas and top with onions, cilantro and lime juice and any other toppings you want.
