Rainbow Detox Roll-Up With Peanut Sauce

If Rainbow Roll-Up doesn't give you some associations with packaged fluorescent fruit skin situations all wrapped up in a little paper coil, then what do you even do? I have quite difficult to separate from my biggest single snack food snack.

It's not like a rainbow roll-up, that's though. This is a rainbow roll-up that can get the word detox in front of it, thanks to a delicious powerhouse and food nutrients like: carrots. chickpeas. curry. red cabbage. peanuts. dark green leafy.

Rainbow Roll-up:

  • carrots, cut matches
  • cucumber, cut matches
  • red cabbage
  • curry hummus
  • rice or quinoa (optional)
  • beans and cilantro
  • Collard green (leaves)

Peanut sauce:

  • 3/4 cup of peanut butter
  • 1/4 cup of soy sauce (tamari or coconut if it's gluten free)
  • 1/4 cup of rice vinegar
  • 1/4 cup of water
  • 2 tablespoons of honey
  • 1 clove of garlic


  1. Trim the stem / spine of collard leaves - do not cut it at all, but only cut it so that it is good and thin and supple.


  1. Set your fillings on collard leaves. Fold the tip and roll from front to back, trying to keep everything there good and tight. Watch videos for visual examples.
  2. Peanut Sauce: Run all ingredients through a blender or food processor. Voila!
