Quick And Easy Recipes For Summer Entertainment #christmas #lunch

We don't usually plan for an elaborate summer party - we are more inclined to get together with friends. Even though I love in the kitchen, this is not a social place when your guests hang out on the deck. Plus, this girl doesn't really enjoy the sun's red light coming from the hot kitchen in the summer, if you get me.

When it comes to this get-together, I want to leave the main court for people and grills. But I love making easy recipes, fresh side dishes that don't require the use of an oven (or other heat source, this!).

When faced with entertaining last minute, I always take a simple approach to food - dips, salads and no-baked desserts that are full of fresh summer produce.

Fresh Dill Dip

  • 1 cup of reduced fatty acid cream
  • 1/2 cup of fat decreases mayonnaise
  • 2 tablespoons of finely chopped onion Vidalia
  • 2 tablespoons of finely chopped fresh Italian parsley
  • 1 tablespoon finely chopped dill weeds

  • 1/2 cup of sugar

  • 1/2 cup of vegetable oil


  • 5 ounces (about 4 cups) baby Rocket
  • 1 cup of strawberry slices
  • 1/3 cup collapsed goat cheese
  • 1/4 cup of sliced ​​almonds
  • No-grilled pineapple cheesecake


  • 3/4 cup crackers
  • 1 tablespoon of sugar
  • 2 tablespoons of unsalted butter, thawed


  • 1 (8 ounces) cream cheese package, softened
  • 3 tablespoons of granulated sugar (see note below)
  • 12 ounces of canned pineapple, porridge
  • 1/2 tsp pure vanilla extract
  • 1 (8 ounces) tub of frozen whipped topping, thawed


  • Whipped topping, optional
  • fresh pineapple, optional

For Fresh Dill Dip

  1. Mix all ingredients in a medium bowl.
  2. Season with salt and pepper.
  3. Cool until it's cool.

For Strawberry Salad with Poppy seed sauce

  1. In a medium bowl, shake with sugar, poppy seeds, onions, vinegar and oil. Cover and cool until ready for use.
  2. In a medium bowl, combine arugula, strawberry, almonds and goat cheese. Mix with the desired amount of dressing to coat and serve immediately.

For No-Roasted Pineapple Cheesecake

  1. In a medium bowl, stir the crumbs of crackers, sugar and melted butter. Evenly divides crumbs between individual serving dishes and press into the butt of the dish to form a crust layer.
  2. In a large bowl with an electric mixer, shake the cream of cheese and sugar at medium-high speed until smooth and soft, about 3 minutes. Add in pineapple and vanilla and stir to combine, friction down the side of the bowl as needed. Using a rubber spatula, fold it in whipped topping until mixed.
  3. Evenly distribute pipes or spoons into dishes ready to serve individuals. Cover with plastic and cool for at least 3 hours before serving.
  4. If desired, decorate with additional whipped toppings and fresh pineapple.
