Pizza Cake Cups

This is my first attempt at a tasty mug cake. I'm quite happy with the results. This is great if you want to only serve one.

I don't think it's as good as pizza cupcakes, but it's a good quick fix. Like pizza cupcakes, I aim more for muffin textures for basic. I originally did a soft version of the cake but it was strange to eat unsweetened cookies.

This feels very good with the marinara sauce side. You can always pour over the cake after cooking too.

I originally made this in a mug. This works great on mugs but because it doesn't rise much, it's hard to show cookies in photos. So then I made it in 6 oz. That almost doesn't only fit in the mold. You have to stir carefully and slowly, but it works and I like how little cheese bubbles.


  •  4 tablespoons of flour
  •  1/8 teaspoon of baking powder
  •  1/16 teaspoon of baking soda
  •  1/8 tsp salt
  •  1/2 tsp Italian seasoning
  •  3 tablespoons of fat-free milk
  •  1 tablespoon vegetable oil
  •  tsbp 1 tablespoon 1 shredded mozzarella cheese
  •  14 mini pepperoni
  •  marinara sauce side


  1. Mix the flour, baking powder, baking soda, salt, herbs, milk, and oil with a small shake. You can make it in a microwave safe mug or in a 6-oz mold. If using the mold, make sure to stir slowly, letting the flour enter a little at a time. Mix until the mixture is smooth.
  2. Add 1 tablespoon of shredded cheese and 7 mini pepperoni and mix into the mixture. Sprinkle 1 tablespoon of cheese evenly across the surface of the mixture. Add the mini pepperoni left above. Cook for about 1 minute microwave. Eat either marinara sauce (drizzle over), or swim in a spoon.
