Grilled Cauliflower, Mushrooms And Quiche Goat Cheese With Quinoa Crust #christmas #cheese

Roasted cauliflower and mushrooms along with cream cheese on quiche are light and delicious with quinoa crust.

I have really enjoyed cauliflower and mushroom combos lately, especially if they are grilled, and I think that it is about the time that I use it in breakfast dishes and the quiche is the perfect way to do it! I want to keep things on the side that are lighter and healthier so I start with quinoa crust, which is easy to make, you just mix the eggs and maybe some cheese into cooked quinoa, press into the pie plate and pre-bake before filling it and baking again. From there I grilled cauliflower and mushrooms and added the usual suspect quiche, eggs and cream, along with goat cheese, because the quiche was not quiche without cheese! (Aged white cheddar or blue cheese will also be amazing in this quiche!) Cauliflower and mushroom combos work wonderfully well in this quiche and now I can enjoy my favorite combos for breakfast and dinner!

For quinoa crust:

  • 1/2 cup of quinoa, rinsed
  • 1 cup of water
  • 1 egg
  • 1/4 cup of parmigiano reggiano (parmesan), grated (optional)

For quiche:

  • 1/2 medium head of cauliflower, cut flower petals
  • 8 ounces of mushrooms, headquartered
  • 1 tablespoon of oil
  • salt and pepper to taste
  • 5 eggs
  • 1/2 cup of milk or heavy cream
  • 1/2 teaspoon of thyme, chopped
  • 4 ounces of goat cheese, collapsed
  • salt and pepper to taste

For quinoa crust:

  1. Bring the quinoa and water to a boil, reduce heat, bring to a boil, cover, until tender and most of the water has been absorbed, about 15 minutes, remove from heat and allow to sit closed for 5 minutes.
  2. Mix quinoa, eggs and parmesan, press down on the pie plate and bake in an oven 375F / 190C until golden brown, about 10 minutes, before setting aside.

For quiche:

  1. Throw cauliflower and mushroom oil, salt and pepper, place on a baking sheet in a single layer and bake in a 400F / 200C oven until they begin to caramelize, about 20-30 minutes, halfway through mixing.
  2. Mix cauliflower, mushrooms, eggs, milk, thyme, goat cheese, salt and pepper, pour into the crust and bake in an oven 375F / 190C until golden brown and located in the center, about 30-35 minutes.
