When it comes to Mexican food, Coxinha recipes are a favorite. They are so yummy with hot meat and melty beans and cheese. Unfortunately, they are usually fried and that counts calories (and a feeling of weight in your stomach) a lot! To swoop in and save the day, we have a delicious recipe for easy toasted chimichanga featuring nuts, beef and cheese.


This
 recipe is super easy to make and I have a little extra trick to make it easy even the next time you make your Coxinha recipe baked. When preparing this recipe for the first time, making a double batch of meat filling. Take half of it and store it in the freezer. Then, the next time you are ready for some Coxinha recipes, you just have to defrost your meat, assemble and bake. Want to be faster? It's also perfect for freezing after they are fully cooked. Take one for a quick lunch and throw in a microwave oven or toaster and you have a delicious dish ready to go!

Material

  • 1 pound of ground beef
  • 1 teaspoon of oregano
  • ½ teaspoon of salt
  • ½ teaspoon of powdered garlic
  • ½ teaspoon of onion powder
  • 2 teaspoons of tomato sauce
  • ½ cup of corn
  • 2 tablespoons sofrito (optional)
  • 3 tablespoons of cilantro, chopped
  • 18oz fried beans
  • 1 cup shredded cheese, (cheddar or desired type) or more if desired
  • 10 tortilla flour (10 inches)

Instructions

  1. Preheat 350 degrees oven.
  2. In the top pan, heat is high, brown beef for 5-7 minutes. Drain grease, return the meat to heat and add oregano, salt, powdered garlic, onion powder, tomato sauce, corn, cilantro and sofrito. Reduce heat to medium. Cook extra 2-3 minutes, until cooked and taste infused together. Turn off the fire.
  3. Take a tortilla and spread 2-3 tablespoons of fried beans to the tortilla. Layer 3-4 tablespoons of meat mixture on roasted peanuts. Sprinkle 2-3 tablespoons of cheese over the meat mixture.
  4. Roll tortillas into burritos.
  5. Coxinha recipe place on a baking sheet, bottom side stitching. Bake for 10-15 minutes.
  6. Serve and top with sour cream and salsa, if desired.
