Made with butter, sour cream, leeks, cheddar cheese and meat, it is the ultimate in low carb comfort food!



A few weeks ago I brought you beautiful people one of my favorite recipes for cauliflower puree with celery roots and talked about how cauliflower is an unknown hero of the world of low carbohydrates. We use it for almost everything, we don't?

I knew that I had personally roasted cabbage flowers with bacon and green onions as a side and had porridge to add to the body of creamy celery soup. I have also been seasoned with exotic Indian spices in a beautiful vegetable masala and I have added to a delicious beef curry. One of my favorite ways to enjoy cauliflower is like fried cauliflower, it's a sub for French fries. Yum!

Material

  • 1 pound cauliflower florettes
  • 4 ounces of sour cream
  • 1 cup grated cheddar cheese
  • 2 slices, cooked bacon collapsed
  • 2 tablespoons of chopped onion
  • 3 tablespoons of butter
  • 1/4 tsp garlic powder
  • salt and pepper to taste

Directions

  1. Cauliflower cut the florettes and add them to a microwave safe bowl. Add 2 tablespoons of water and cover with plastic. Microwave for 5-8 minutes, depending on your microwave, until it's thoroughly cooked and tender. Drain excess water and let it sit revealed for a minute or two. (Alternately, steam your cauliflower the conventional way. You may need to squeeze a little water from the cauliflower after cooking.)
  2. Add the cauliflower to the food processor and process until smooth. Add butter, powdered garlic, and sour cream and process until it resembles the consistency of potato mashes. Remove the mashed cauliflower into a bowl and add most chive, save a few to add to the top then. Add half the cheddar cheese and mix it by hand. Season with salt and pepper.
  3. The top of the cauliflower is loaded with the remaining cheese, the remaining scallions and meat. Put it back in the microwave to melt the cheese or place the cauliflower under the grill for a few minutes.
  4. I visually divided cauliflower into sixths. Serving size is around 1 / 3-1 / 2 cups.
