Chicken Dijon Paleo Honey with Bacon, Mushrooms & Dry Sun Tomatoes

I was searching on Pinterest for yummy one-pot food to make and was inspired by soft Maple Chicken w / Bacon recipes by Wholesomelicious. I tweaked the recipe a little to make my own by replacing maple syrup with honey, onion leeks by adding sun-dried tomatoes. I think you also want the original recipe, Paleo is friendly.

Material

  • 4 slices of bacon, cut 1/2 inch
  • 1 medium of onion, diced
  • 1 clove of garlic, sliced
  • 8 ounces of mushroom slices (first baby Bella, anything will work)
  • 1/2 cup of sun-sliced ​​dried tomatoes in olive oil (I use Delallo)
  • 1 can be full of fat coconut milk
  • 1 tablespoon of honey
  • 2 tablespoons of Dijon mustard
  • 4 boneless, without chicken breast skin
  • salt & pepper to taste
  • Decorate with parsley

Instructions

  1. Bring a large pan or hot pot. Add pieces of meat and stir-fry until crispy, about 5 minutes. Remove meat with a hollow spoon and set aside.
  2. Add onions, garlic, and mushrooms to fat bacon. Saute for 2-3 minutes.
  3. Add tomatoes, coconut milk, honey and mustard and stir. Add chicken and coat in sauce. Bring to a boil, and reduce heat to moderate boiling. Turn the chicken halfway through cooking to ensure even cooking.
  4. After the chicken is cooked, (check with the knife in the thickest part of the breast) for about 15-20 minutes, add salt and pepper to taste.
  5. Decorate with bacon and parsley.
