Chicken Bundle Parmesan

You know that we LOVE chicken! It's our favorite meat and one that loves the whole family, so I'm always trying to get out a new chicken dinner recipe for the crew. Today's recipe is one that I saw years and years ago and one I finally made time to try. This is a super simple recipe, and I'm a little crazy I didn't try faster because it's only good. These Parmesan Chicken files are easy and so delicious and one of the most family loved.

I say in part because some kids are concerned that there are some "green stuff" (spinach) in their chickens and that's a bit of a panic for them (yes, most of my kids don't like spinach). 🙁 Fortunately, hubby and I like it so much we have twice a month. Crackers covered with crackers and filled with cheese and spinach, and all topped off with your favorite pasta sauce, you really can't go wrong! I was thinking this chicken would be great served with our fried Zucchini and maybe the Tortellini Salad. Great meal ideas for Sunday dinner or for companies too.


  • 6 thin chicken breasts (you can pound it down if they are a little thicker)
  • 4 oz cream cheese softened
  • 10 oz frozen spinach, thawed and dried, chopped
  • 1 1/2 cups grated Mozzarella cheese, divided
  • 6 tablespoons of parmesan grated cheese, divided
  • 1 egg, beaten
  • RITZ 10 crackers are destroyed
  • pasta sauce (your favorite, warm up)


  1. Preheat oven 375.
  2. In a medium bowl, combine cream cheese, spinach, 3 TB of Parmesan cheese, and 1 cup of Mozzarella cheese. Stir and set aside.
  3. Place cracker crumbs and grated Parmesan cheese on a shallow plate and egg in a bowl. Set aside.
  4. Spread the mixture of cheese and spinach to the chicken breast and roll the chicken tightly. Secure with a toothpick.
  5. Roll the chicken egg bundle and then in the crumbs and cheese dish and evenly coat it.
  6. Place the chicken stitch into an oily 9 x 13 plate. Spray with cooking spray and bake for 30 minutes. Remove the toothpicks before serving and top with warm pasta sauce and the rest of Mozzarella cheese. ENJOY!
