Breakfast rolls filled with scrambled eggs, bacon, sausages & cheese then rolled in homemade dough and grilled to perfection. This roll is perfect for breakfast, lunch or dinner!

Breakfast bread comes from two things: first, I really love all things breakfast. Secondly, my children went crazy when I made my Pinwheels Pizza, so I thought to turn them into breakfast food. Results. OMG. Serious. They're so insanely delicious. I like that they are handheld and still have high protein breakfast food I love - eggs, bacon & sausages! They come together quickly too. I use pre-cooked bacon, sausage and shredded cheese bought at the store. You can even scramble eggs in the microwave if you want! You can prepare all filling while homemade dough rests in a warm place. Try them - you will love them!

Breakfast roll ingredients:

  • 1 cup of warm water
  • 1 tablespoon of yeast
  • 1 tablespoon of sugar
  • 1 tablespoon of oil
  • 1 tsp salt
  • 2 1 / 2-3 cups of flour
  • 2 tablespoons melted butter
  • 2 cups of Jack Cheddar Cheese shredded
  • 12-15 cooked thin slices of meat, chopped
  • 6 Breakfast cooked sausage, chopped
  • 4 large eggs, an omelet

Breakfast rolls instructions:

  1. Mix warm water, yeast and sugar in a bowl and leave it for about 3-4 minutes, until the yeast is bubbling. Add oil, salt and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the bowl. (I use a mixer for this part as it's just a lot easier!) Keep mixing for an additional 3-4 minutes, then cover with a plastic wrap and let it sit in a warm place for 15 minutes. In cold weather, I want to turn my oven on for about 3 or 4 minutes, then turn it off and let me have the dough to rest in the oven.
  2. Preheat the oven to 400 degrees F.
  3. Spray the counter top with a non-stick cooking spray and roll the dough into a large rectangle about 1/4 thick. Brush the mixture with melted butter, then spread it with scrambled eggs. Sprinkle grated cheese on top (leave about 1/2 cup for later), then spread bacon and sausage.
  4. Starting with one of the long sides of the rectangle, rolling the dough tightly, working from one end to the other horizontally, then back again. Pinching the stitches is closed at the end. Use a sharp, thin knife to cut 1 1/2 parts of the dough from a large roll. This will produce around 15 rolls.
  5. Set rolls on a large oily pan. Bake for 12-14 minutes. Remove from the oven and top the rolls with the remaining 1/2 cup of cheese. Return to the oven for an additional 1-2 minutes, until the cheese melts and the rolls begin to turn golden brown.
  6. Brush with melted butter again, if desired. Serve warm. Store leftovers in the refrigerator in an airtight container.
