Beef Wrapped In Cheap Jalapeños Dolls #CHRISTMAS #LUNCH

About to sit down to watch the crow's game two weeks ago, my husband (!) And I stood in front of an open fridge deciding what to make. Besides butter, scraps, eggs, spices, other seasonings, so much seasoning, and beer (much needed for shopping) Kevin saw three jalapenos. I saw cream cheese. He saw meat. Wham bam, three jalapenos dolls, thank you.

Material:

  • 12 fresh jalapeno peppers1
  • 8 ounces of cream cheese, softened to room temperature
  • 1 cup shredded cheddar cheese2
  • 1 clove of garlic, chopped
  • 1/2 teaspoon of smoked peppers
  • 12 slices of pork, cut in half
  • toothpick 24

Direction:

  1. Preheat the oven to 400F degrees. Large baking sheet with parchment paper (best for cleaning) or silicone baking mat. Place the baking rack on a baking sheet. Set aside.
  2. Cut the jalapeno peppers in half lengthwise; Remove the seed and the center of the membrane. Set aside.
  3. Using a handheld or stand mixer equipped with paddle attachments, shake the cream cheese, cheddar cheese, garlic, and peppers together until combined. You can also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoons fill the same between all 24 jalapeno parts.
  4. Wrap the jalapeno each doll with half a piece of meat and stick a toothpick through the center to make sure the meat stays in place. Place each on a cake rack and bake for 25-28 minutes or until the meat is crispy to your liking. I want to change the oven to bake for the last minute or two to get something extra crispy. Serve immediately. Cover the rest and stay in the refrigerator for 4 days.
  5. Make the front end: jalapeno peppers can be filled and wrapped 1 day in advance. Chill until it's ready to bake. You can also assemble and freeze for up to 2 months. Melt overnight in the fridge and bake as directed.
