This 30 minute Minestrone Tortellini soup is filling, high-fibe vegetarian dinners that come together quickly for weeknights busy people!

A large delicious bowl filled with cheese tortellini, green beans, carrots, beans, celery, onions and Italian spices in tomatoey rich (is that the word?) Broth. This soup is truly the most perfect recipe for Meatless Monday ever.


  • 1 tablespoon of olive oil
  • 2 small yellow onions, diced
  • 4 minced garlic cloves
  • 4 celery sticks, chopped
  • 3 carrots, peeled and chopped
  • 1 cup of chopped green beans
  • 1 teaspoon of dried oregano
  • 1 tsp dry basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 14oz cans of finely chopped tomatoes (or one 28oz can)
  • 1 can of nuts, dried
  • 4 cups of chicken or vegetable broth
  • 1 350g package of cheese tortellini
  • Fresh basil, for decoration
  • Fresh parmesan, for decoration


  1. In a large, deep pot, heat the olive oil to high heat. Add the onion and garlic, sauteeing for 30 seconds until fragrant. Add celery and carrots, cook another 3-4 minutes.
  2. Add the remaining ingredients except the tortellini cheese. Bring to a boil and then simmer for 20 minutes. Add tortellini and cook another 5 minutes.
  3. Serve in a large bowl and sprinkle with fresh basil and grated parmesan cheese. Enjoy!
